Ingredients of Veg Pulao
- Prepare 1 cup of Rice.
- You need 1/2 cup of Onion chopped.
- It's 1/2 cup of Carrot cut lengthwise.
- You need 1/2 cup of potato cut lengthwise.

- Prepare 1 of Bay leaves.

- Prepare 4 Teaspoons of Butter Clarified.
Veg Pulao instructions
- Soak the rice in water and set aside for Ten minutes.
- Grind the ingredients in "To Grind" section to a smooth paste and set aside.
- Pour 4 tablespoons of clarified butter (Ghee) in medium sized pan or pressure cooker.
- Add the Spices one by one and let them release the flavor. Add fennel seeds in the last. Make sure you have a medium flame else the spices might burn.
- Add the chopped onions first and stir them till they become golden.
- Add the tomato and stir till they become mushy. Add the cut vegetables and Stir the them for 3-5 minutes add some salt at this point.
- Drain the water from the soaked rice and add them to the pan or cooker and mix them well for 5 minutes.
- Add the ground paste and mix them to the rice well. Add 1 1/2 cup of water to the rice and stir. Check for salt again if needed you can add more depending on your taste..
- Cover the pan and cook in medium flame for 10 minutes tightly covered. If you are using a pressure cooked cook for 2 whistles turn off the gas. Open the lid and give the rice a good mix. Let the rice rest for 5 min before serving. Serve with Raitha Papad and Pickle..
