Assam Prawns. Tamarind prawn or assam prawn is a Malaysian-Nyonya recipe, one that I grew up eating as my late mother made a killer dish of assam prawn, or "assam heh/亚参虾" (in Hokkien dialect). Ingredients of Assam Prawns

  4. You need 1 tablespoon of dark soy sauce.

  6. You need 1/2 tablespoon of salt.

  9. It's 1 tablespoon of sugar.
  10. Prepare 1 stalk of daun limau purut (kaffir lime leaves).
  11. You need 1/2 cup of water.

Assam prawns is a typical Peranakan dish which is delicious and appetizing. These tamarind prawns are cooked in a sour and sweet sauce until it is reduced to create a caramelized gravy. Extract the juice from the tamarind by pressing the pulp. Remove the heads of the prawns.

Assam Prawns step by step

  1. Wash and marinate prawns for at least 2 hours in fridge..
  2. Heat oil in wok. Add in prawns and marinade, then sugar and sliced daun limau purut. Add water for a bit of gravy. Fry until fragrant and slightly burnt..
  3. Serve with rice or fried bee hoon. Also good just on its own..
