Heat olive oil (about ¼ inch deep in bottom of skillet) to a medium heat.

Ingredients of Zucchini Patties
- It's 2 of zucchini/courgettes.
- Prepare 1 small of egg.
- You need 3 tbsp of all-purpose flour.
- It's 1 tbsp of breadcrumbs.
- Prepare 1 of salt, black pepper and cayenne pepper.
When the oil is hot enough drop a glob of zucchini batter into the skillet and flatten it a bit. These Zucchini Patties are super cheesy with Provolone and Parmesan cheese and are incredibly delicious. They make for a perfect side dish or appetizer! I love these zucchini patties, and I've been making them for years.
Zucchini Patties instructions
- Grate zucchini, put in a colander and gently squeeze out the liquid. Combine courgettes with the egg, flour, breadcrumbs and seasoning in a large bowl.
- Flour your hands, roll the mixture into small patties, roll them in breadcrumbs and put on a baking sheet.
- Mixture will be sticky. Drizzle with some oil. Put in a 230°C preheated oven.
- Turn patties over after 10-15 minutes, brush with some more oil and put them back in the oven for 5-10min.
- Serve with some hot sauce as a side dish or as a snack. Enjoy :).
Immediately stir in the onion and eggs. Scoop about a ¼ cup of zucchini mixture and add to skillet. Place on a paper towel-lined plate, sprinkle. Shredded zucchini combined with bread crumbs, egg, mayonnaise, mustard and Old Bay Seasoning, and formed into patties and baked. The flavor of the Old Bay with the texture of the zucchini makes a great substitution for crab cakes.
