Ingredients of Vegetarian/Vegan Bolognese

  1. Prepare 1 of small head of cauliflower.
  2. Prepare 1 lb of mushrooms, I prefer a wild mix.
  3. Prepare 2 cups of carrots, shredded or whole.
  4. You need 1 of small yellow onion.
  5. Prepare 4 tbsp of garlic.
  6. It's 2 tbsp of crushed red pepper.
  7. It's 1 tbsp of dry basil.
  8. Prepare 1 tbsp of dry thyme.
  9. It's 2 tbsp of sugar.
  10. Prepare 4 cans (28 oz) of crushed tomatoes.
  11. You need 1 cup of red wine.
  12. You need 1/2 cup of Olive oil.
  13. It's to taste of Salt and pepper.

Add the onion, carrot, celery and a pinch of salt. Heat the oil in a saucepan and gently fry the onion, carrots and celery until the onion is starting to soften.   1. Rough chop your cauliflower, carrots,onions and mushrooms..

  4. Add your vegetable mix, herbs and spices and saute until they soften..
  5. Add your red wine and reduce by 1/2..
  6. Add your tomatoes and sugar and simmer for about 35/40 mins.
  7. Serve with your favorite pasta and enjoy!.
