  1. You need 3 lb of bag of small red potatoes.
  2. Prepare 7 of eggs.
  3. You need of Sweet relish.
  4. Prepare of Miracle whip.
  5. It's of Sandwich spread.
  6. It's of Mustard.
  7. Prepare of Paprika (optional).

This potato salad is creamy, tangy, and flavorful with just a little kick of spicy. Plus it has a little crunch from the celery and onions. When possible make mom's potato salad the day before you plan to serve it. However, if you don't have time to make it a day ahead, refrigerate the potato salad for as long as humanly possible before meal time.

  1. Peel the potatoes and cut into 4 sections. Rinse potatoes and put in a pot of water; boil until tender.
  2. Boil eggs to your liking (mine were hard boiled) place eggs in cold water and set aside.
  3. When potatoes are tender drain and place in bowl; set aside.
  4. Peel eggs. Dice 5 eggs and add them to the potatoes; set the other 2 to the side.
  5. Add a cup of relish, cup of miracle whip, cup of sandwich spread, and 2 tbsp of mustard.
  6. Continue adding above ingredients WHILE TASTING until you get to your desired flavor and consistency.
  7. Once it is perfect to you slice the remaining 2 eggs and place them on top of the potato salad. Sprinkle paprika on top.
  8. Place a lid over it and put in the refrigerator until ready to serve.
  9. ENJOY!!.
